Cucumber Tomato Salad 1 large organic beefsteak tomato, or several smaller tomatoes) 1 large organic cucumber about 1 tablespoon of good quality organic extra virgin olive oil one handful of crumbled organic feta cheese freshly ground organic black pepper, to taste 4-6 fresh organic basil leaves, shredded (optional) Peel the cucumbers if you wish.
