PARTY CHILI

Ingredients:

Organic Chili

Super Chili for the Super Bowl

1 can organic pealed tomatoes
1 can organic black beans
1 can organic chick peas
2 zucchini
1 onion
2 carrots,
2 celery stalks
1 red pepper
green chilies
garlic gloves
oregano
cumin
salt
chili powder

To make:

Cooking this chili in a crock pot make this an easy dish, since it will help seal in flavor while slow cooking, and can also double as your serving dish. To make, dump first 3 ingredients in Crock Pot. Dice zucchini, onion, carrots, celery stalks, red pepper and green chilies and add to pot. Season with garlic gloves, oregano, cumin, salt and chili powder to your liking, and let simmer for 4 hours. Serve with homemade tortilla chips from the recipe that follows, if you like.

HOMEMADE TORTILLA CHIPS

Ingredients:

Organic corn tortillas
Cooking spray
Spices, such as basil, cayenne, rosemary, or sea salt

To make:

Making your own tortilla chips is fast and easy and healthy! Add your own spices for just the right flavor. To make, cut corn tortillas into sixths, and spread on a cookie sheet sprayed with cooking spray. Bake in the oven at 400 degrees for about 6 minutes, then flip. Lightly spray the other side with cooking spray and sprinkle with your favorite dried spices. Try basil, cayenne, rosemary, or just plain sea salt, and bake that side for 6 more minutes. Then just cool and serve with the above chili recipe or your favorite dip.

Super Bowl Homemade Snack Mix

Almost any store bought snack mix will have some extra unwanted ingredients, such as flavor additives or trans fats. Here’s an easy and simple recipe to make your own.

Combine your favorite shredded oats cereal (try Barbara’s Bakery), cheddar cheese crackers (Late July’s are fantastic), lightly salted or peanut butter pretzels, dry roasted soy nuts, chickpeas or lentils, and some miniature bread sticks (if you like them extra crispy, find a brand made from spelt). Mix all the ingredients together in a large bowl, season with 1 teaspoon hot sauce and some cayenne pepper, and sprinkle with parmesan cheese. If you want to take it a step further, preheat the oven to 300ºF, toss in a little olive oil (about a tablespoon), spread the mix on a baking sheet and bake for 30 to 40 minutes.
