Now, if that green you’re thinking of represents the environment, and the food and drink is delicious and organic, then we’ve got all the ingredients right here to serve up a St. Patty’s Day celebration…no pinching necessary!

Irish Soda Bread

Yields 6 to 8 servings

Irish Soda BreadIngredients:
3.5 cups cake flour or all-purpose flour
1 tsp salt
1 tsp sugar
1 tsp salt
3/4 cup raisins, optional
1 and 1/4 to 1 and 1/2 cups buttermilk. For a dairy-free version: 1 1/4 to 1 1/2 cups soy milk or almond milk + 1 tsp apple cider vinegar

Directions:
1. Preheat your oven to 425 degrees and grease a cast-iron skillet.
2. Whisk together the dry ingredients. *If doing the dairy-free version: combine the vinegar and soy milk, and allow it to stand for 3-5 minutes to curdle.
3. Slowly add the milk, stirring until a dough forms. It may take between 1 and 1 and 1/2 cups, depending upon the humidity.
4. Knead the dough for about 10 seconds, form into a ball and place into the prepared skillet.
5. Bake for 30-35 minutes.

Creamy Corn and Broccoli Chowder

Cook time: 10 min
Makes 6 one-cup servings

ingredients
2 tablespoons butter
1 medium organic onion, chopped (1/2 cup)
1 clove organic garlic, finely chopped
3 tablespoons all-purpose flour
1/2 teaspoon coarse salt (kosher or sea salt)
1/8 teaspoon pepper
3 cups reduced-sodium organic chicken broth or vegetable broth
3 cups fresh or frozen organic broccoli cuts
2 cups fresh or frozen organic sweet corn
1 cup half-and-half

preparation directions
1. In 4-quart saucepan, melt butter over medium heat. Cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, 1 minute.
2. Stir in broth, broccoli and corn. Heat to boiling over high heat. Reduce heat; simmer 5 to 7 minutes, stirring occasionally, until vegetables are tender.
3. Stir in half-and-half. Cook 2 to 3 minutes or until hot (do not boil).

Organic Chocolate Mud Balls

INGREDIENTS:

Butter (for greasing pan)
1 boxed organic chocolate cake mix
16 ounces organic whole milk (may substitue 2% but do not use 1%, skim or fat-free)
3-4 heaping tablespoons organic chocolate syrup
1/2 cup organic butter, melted
3 large eggs
Chocolate frosting (see recipe below) or 1 container prepared chocolate frosting
Green sprinkles, green decorator’s sugar, green shamrock candies or any combination
Wax paper
24 cupcake liners

DIRECTIONS:

Preheat oven to 350° F.
Grease 13 x 9-inch baking pan with butter.
Line baking sheets with wax paper.

In large glass, mix milk and chocolate syrup together. Reserve 1/2 cup chocolate milk and pour remaining 11/2 cups into large bowl.
Add cake mix, melted butter and eggs. Stir until moistened.
Whisk for 2 minutes or beat with mixer on medium speed for 2 minutes.
Pour into baking pan.

Bake for 35 minutes or until done. Remove from oven and cool on wire rack.
Frost cake with chocolate frosting.
Scrape a fork along the top of the cake until cake crumbles.
Pour remaining 1/2 cup chocolate milk over cake and stir well. Cake should be doughy.

Use an ice cream scooper to scoop out cake mixture in 2 inch balls.
Place balls on wax-lined baking sheets and refrigerate for 1 hour.
Roll dough into firm balls.
Roll entire ball in sprinkles or dip only the top of the ball in sprinkles.
Place balls in cupcake liners.
Keep refrigerated until ready to serve (up to 24 hours). Serve cold.

Chocolate Frosting:

INGREDIENTS:

3 cups confectioners’ sugar
6 tablespoons unsweetened cocoa powder
6 tablespoons organic butter
4-6 tablespoons organic evaporated milk
1.5 teaspoons pure vanilla extract

DIRECTIONS:

Sift together confectioners’ sugar and cocoa in medium bowl. Set aside.
In large bowl, cream butter until smooth. Gradually beat in sugar mixture alternately with evaporated milk.
Add vanilla. Stir.
Beat on medium speed until light and fluffy.
Add more milk or sugar as necessary until you reach desired consistency.

What’s St. Patrick’s Day without the beer? Many people like to open a cold brew on St. Patrick’s Day to enjoy with a hearty meal. Here are some suggestions for beers that are both tasty and organic:

The Peak Organic Brewing Company’s limited edition winter release King Crimson or Espresso Amber Ale are good St. Patty’s day choices.

New Belgium Brewery’s Mothership Wit is an organically-produced beer that would pair nicely with a St. Pat’s feast.
