Salsa is the perfect healthy treat for summertime. You can take advantage of the healthy, fresh organic vegetables available this time of year, and have a delicious treat for a party, backyard BBQ, or just a light and healthy snack. Here are some salsas that make use of fresh organic ingredients, with a surprising twist.

 

Organic Watermelon Salsa

Prep Time: About 10 MinutesSalsa

½ Cup Chopped Organic Watermelon
¼ Cup Chopped Organic Tomato
2 Tbs Chopped Organic Red Onion
1 Tbs Chopped Organic Jalapeno
1 Tbs Chopped Organic Cilantro
2 Tablespoons Freshly Squeezed Lime Juice
1 Clove Organic Garlic, Minced
Salt and Pepper to Taste

Chop watermelon, tomato, and onion in small cubes. Finely mince garlic, jalapeno, and cilantro. In a medium mixing bowl stir all ingredients, including spices together. Serve with tortilla or pita chips.

Cucumber-Corn Salsa

Start to finish: 10 minutes

Makes 3 cups

2 ears of corn, husks and silk removed

1 large cucumber, peeled, seeded and chopped

2 ribs celery, chopped

4 scallions, thinly sliced

2 tablespoons chopped fresh dill

Zest and juice of 1 lemon

Hot sauce, to taste

Salt and ground black pepper

 

Carefully cut the kernels from the ears of corn. To do this, one at a time stand each ear on its wide end and use a knife to saw down the length of the cob.

In a medium bowl, combine the corn kernels, cucumber, celery, scallions, dill, and the lemon zest and juice. Season with a splash of hot sauce, salt and pepper.

 Mango & Peach Salsa

Ingredients:

2 mangoes, peeled and chopped
2 fresh peaches, peeled and chopped
1 sweet onion, diced
1 medium tomato, diced (optional)
2 cloves garlic
2 tbsp chopped fresh cilantro
juice of one lime
dash salt and pepper

Preparation:

Combine all ingredients and chill. To save time, use a food processor to cut all the ingredients in chunks, or if you prefer, you can dice and chop by hand. Chill before serving.

Makes four servings of mango salsa.
