CucumberNothing says summer like a crisp, cool cucumber. Use one in this healthy and organic summer salad, and you have the perfect accompaniment for any backyard gathering. here to get you going is a simple recipe, followed by a few variations.

Cucumber Tomato Salad

1 large organic beefsteak tomato, or several smaller tomatoes)
1 large organic cucumber
about 1 tablespoon of good quality organic extra virgin olive oil
one handful of crumbled organic feta cheese
freshly ground organic black pepper, to taste
4-6 fresh organic basil leaves, shredded (optional)

Peel the cucumbers if you wish. Cube the tomato and the cucumber and put them in a pretty glass bowl. Add the olive oil, and toss in the cheese and basil. Stir, and let sit for 10-15 minutes, so that the juices blend to become the dressing. Serve the salad with good quality organic crusty bread to sop up the juice. 2-4 servings.

Thai Cucumber Salad

1 medium English cucumber, unpeeled (halved lengthwise and very thinly sliced)
1 small jalapeño or Serrano chile (very finely diced, or to taste)
1 tablespoon minced fresh mint or Thai basil
1 tablespoon fresh lime juice
1 tablespoon Sugar (preferably superfine)
2 teaspoons unseasoned rice vinegar
2 tablespoons chopped roasted salted peanuts


Place the cucumbers in a medium-size bowl and add the chile and mint. Toss to combine.

Mix the lime juice, sugar and vinegar in a small cup, stirring until the sugar dissolves. Add the juice mixture to the cucumbers and toss to combine.

If you’re not serving the dish immediately, refrigerate (covered) for up to 4 hours. Just before serving, add the peanuts and toss again.

Hungarian Cucumber Salad

4 cucumbers, peeled and sliced paper thin on grater
2 teaspoons salt
1/3 cup white vinegar
1/3 cup sugar [or brown sugar or agave]
1/4 cup water
Black pepper to taste, preferably freshly ground
Sweet Hungarian paprika to taste

1. Place sliced cucumber in a bowl + salt down with the salt. Refrigerate for at least 1 hour.

2. Remove cucumbers from refrigerator + squeeze out excess water. Place back in bowl.

3. Add all remaining ingredients. Serve + enjoy!
