Chocolate-filled Pumpkin Whoopie Pies

Makes about 12 pies


1½ cups flour
1½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon all spice
¼ teaspoon nutmeg
1 cup brown sugar
1 cup organic pumpkin puree
2 organic eggs
⅓ cup oil (or substitute unsweetened applesauce)
½ teaspoon vanilla extract
**For Chocolate Filling***
¼ cup unsalted butter, at room temperature
1 cup powdered sugar
5 tablespoons unsweetened cocoa powder
1-2 tablespoons milk


1. Preheat oven to 350F and line a baking sheet with baking paper.
2. In a medium bowl combine flour, baking powder, salt and spices and whisk until well combined.
3. In a second, larger bowl whisk together the brown sugar, pumpkin and eggs. Add the oil and vanilla until well combined.
4. Pour the flour mixture into the egg mixture and using the whisk mix until all of the ingredients are just combined.
5. Spoon rounded tablespoons of the batter onto the sheet, about an inch apart, or if you want prettier pies, use a pastry bag with a large tip.
6. Place on center rack and bake for 14 minutes. Transfer to wire cooling racks and allow to cool completely.

To make filling:

1. Whip butter until fluffy.
2. Add sugar and cocoa powder and continue to beat until well combined.
3. Add a little of the milk at a time, until the filling has a consistency that can be easily spread.
4. Spread about a tablespoon of the chocolate filling on the bottom of a cake. Top the frosting with a second cake and enjoy!

Pumpkin Brownies
Yields: 16 servings
¾ cup flour
½ teaspoon baking powder
½ teaspoon salt
¾ cup butter, melted
1 ½ cups sugar
2 teaspoons vanilla
3 eggs
¼ cup cocoa powder
½ cup chocolate chips
½ cup organic pumpkin puree
½ cup walnuts, chopped
1 teaspoon cinnamon
1/2 teaspoon pumpkin spice
1.      Preheat oven to 350 degrees.
2.      Line an 8 x 8-inch baking pan with foil and spray with cooking spray.
3.      In a small bowl mix together flour, baking powder and salt; set aside.
4.      In a large bowl combine butter, sugar, and vanilla; beat in eggs one at a time with a spoon.
5.      Gradually add dry ingredients to wet and stir until batter is well blended.
6.      Divide batter into 2 separate bowls:
BOWL 1: Blend in cocoa powder and chocolate chips.
BOWL 2: Blend in pumpkin puree, walnuts, cinnamon, pumpkin spice.
7.      Pour ½ of chocolate mixture in pan followed by ½ of pumpkin mixture.
8.      Repeat layers: Pour ½ of chocolate mixture in pan followed by ½ of pumpkin mixture
9.      Smooth out the top with spatula. Gently swirl two batters together.
10.  Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean.
11.  Cool pan of brownies on cooling rack.
12.  Remove from pan.
13.  Cut into bars or shapes and enjoy.
