In fact, if you try these simple and healthy twists on a classic favorite, you may find yourself looking for an excuse to make them!

Sweet Potato Biscuits & Gravy


1 cup cooked sweet potatoes
1 cup flour
1 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
4 Tbsp. vegetable oil
1/4 cup toasted sunflower seeds

• Mash the sweet potatoes well in a large bowl. Add the dry ingredients and the oil. Mix well. Add the seeds.
• Using your hands, form into 6 biscuits. Bake for 15 to 25 minutes at 375°F.

Makes 1/2 dozen


2 cups boiling water
2 Tbsp. vegetable oil
3 Tbsp. nutritional yeast
1 vegetable bouillon cube
1/2 cup fresh organic mushrooms, diced
1/2 cup organic onion, finely chopped
Onion salt, to taste
Unbleached all-purpose flour

• In a large saucepan, simmer all ingredients except the flour for approximately 5 minutes.
• Slowly add the flour by tablespoons, whisking after each addition, until the desired thickness is reached.
• Keep warm.

Biscuits & Chocolate Gravy

Vegan Whole Wheat Biscuits:

Makes 1 dozen biscuits


2 cups whole wheat pastry flour or white whole wheat flour

4 teaspoons baking powder

1 tablespoon stevia powder, agave, or other sweetener

3/4 teaspoon salt (omit if using Splenda or similar sweetener)

1/4 cup coconut oil, at room temperature

1 cup almond milk


Preheat oven to 450 degrees F (230 degrees C).
Mix flour, baking powder, stevia powder, and salt in a bowl. Cut in coconut oil with a pastry cutter or knife until mixture resembles coarse crumbs. Stir in almond milk until dough is just moistened.
Turn dough out onto a lightly floured surface; knead gently 8 to 10 times. Pat or roll the dough out into a 3/4 inch thick round. Cut circles with a 2 1/2-inch biscuit cutter and arrange biscuits on a baking sheet.
Bake in preheated oven until lightly browned, 8 to 10 minutes.

Vegan Chocolate Gravy Ingredients:

1 cup plant milk (soy, almond, hemp, coconut)
1 tsp. vanilla extract
1/2 cup evaporated cane juice
2 Tbsp. whole wheat pastry flour
2 Tbsp. unsweetened cocoa powder
1 Tbsp. soy margarine


Stir together the milk and vanilla in a medium-sized mixing bowl. Set aside.
In another bowl, combine the evaporated cane juice, flour, and cocoa powder. Mix well. Pour the milk mixture into the dry ingredients and stir until the cocoa lumps are dissolved.
Melt the margarine in a small saucepan on medium heat. Pour in cocoa-milk mixture and stir continuously until sauce begins to thicken. When the mixture has reached a gravy-like consistency, turn off heat.
